Chateau Pape Clement located in Pessac-Leognan in the north of Bordeaux's Graves production area, near Chateau Haut-Brion, one of the five largest. When making white wine, the winery first uses a bladder press to gently press the fruit, and then uses gravity to transfer the grape juice to barrels for alcoholic fermentation. When making red wine, the winery controls the fermentation temperature between 29°C and 30°C, and the maceration temperature between 27°C and 29°C to better extract tannin and color. The entire fermentation process generally lasts 20 to 35 days. about. The fermented wine is conveyed by gravity into carefully selected oak barrels for aging. Among them, the red wine will be aged in new oak barrels for 18-20 months, during which MLF malolactic fermentation will be carried out; the aging time of the white wine will be controlled at 12-18 months, and the oak barrels will be controlled during the aging period. at lower temperatures.
